Abstract

The present study seeks a better knowledge of the fruit of the date palm, in order to guide towards rational conservation and consumption. The quality of Deglet-Noor dates is studied under four axes: phenotypic, organoleptic, biometric and physico-biochemical. The analysis of variance showed significant differences between the different date samples for some characteristics studied. The dates considered to be good relate to those produced in the orchards of Doucen, Sidi Khaled and Tolga whose phenotypic, organoleptic and biometric characteristics are classified among the best, with acceptable physico-biochemical characteristics. In view of the results, it appears that the fruit of the date palm remains a good source of nutrition and energy.
